After the yeast converts the sugars into alcohol, it’s time to strip the alcohol from the mash using steam through means of a STILL! We chose old-fashioned, pot-style stills for the texture & rich flavor they provide, enabling us to spotlight our spirits with full satisfaction.
We double-distill all of our products making a smooth taste even smoother. At the end of the day, the spent grain is donated to local farmers to feed Rabun County’s happiest livestock!

With special selected grains (some being from our neck of the woods), we start things off by running it through our on-site hammer mill. That finely ground grain is where we’ll begin our MASHING process. Essentially, the point of this process is to cook and convert the starches in the grain - to sugar. Afterwards, we’ll pitch premium
yeast and let mother nature handle the next step…FERMENTATION!
